Granola Goodness

It can be very difficult to find a store-bought granola that doesn’t have any added refined sugars or additives – so why not make your own? Enjoy this delicious granola with some Greek yogurt and berries, on its own as a cereal or as an on-the-go snack! This granola offers up fibre, iron, protein and essential vitamins and minerals to help you get through your busy weeks.

Serves: 8

Ingredients

2 cups large flake oats

¼ cup ground flaxseed

½ cup pecans, chopped

½ cup pumpkin seeds

3 tbsp pure maple syrup

2 tbsp extra virgin olive oil

½ tsp vanilla extract

1 tsp cinnamon

⅓ cup dried cranberries, chopped

Directions

  1. Preheat oven to 325º F. Combine all ingredients in a mixing bowl, other than the dried fruit.  Use your hands to mix well and toss to coat.
  2. Spread the mixture in a thin layer on a baking sheet and bake for 20-25 minutes, flipping halfway through. Mix in the dried fruit once the granola has cooled.
  3. The granola can be stored in an air-tight container in a cool, dry place for up to 2 weeks.
